Guest guest Posted May 19, 2008 Report Share Posted May 19, 2008 Spicy Carrot Pie 8 ozs. fresh carrots 1 prepared pastry crust 1 oz. honey or maple syrup 2 oz. white sugar 2 oz. brown sugar 2 large eggs 1 teaspoon vanilla 1 teaspoon ground cinnamon 1 teaspoon ground nutmeg pinch of ground ginger pinch cardamom 1 teaspoon salt Skin, dice and boil carrots for about 3 to 5 minutes, don't allow carrots to become very soft. Combine carrots, butter, honey, vanilla, salt, eggs and spices in a mixing bowl and mix till smooth. Fold in sugars and pour filling into pastry crust. Bake at 350 degrees for 1 hour.
