Use small curd cottage cheese and any chutney on hand will work too. Barry Baked Papaya Maunakaea (India) 1 1/2 c. small curd cottage cheese 1 1/2 8 oz. pkg. cream cheese, softened 2 tbsps. chutney, chopped 1 tsp. curry powder 1/2 c. water chestnuts, diced 2 tbsps. golden raisins (dark works too) or chopped dates 1/2 c. butter, melted or marg. 3 tbsps. sugar 1/2 tsp. cinnamon 3 papayas, halved & seeded Combine cheeses, chutney and curry. Mix in chestnut and raisins. Fill papayas with mixture. Drizzle with butter. Mix sugar and cinnamon, sprinkle over papayas. Bake at 450 degrees for 15 minutes. Garnish with chutney.
