Guest guest Posted May 14, 2008 Report Share Posted May 14, 2008 Lima Beans with Lemon 2 10-ounce packages frozen lima beans 1 cup water 2 tablespoons fresh lemon juice 1/2 teaspoon salt Sauce: 2 tablespoons butter grated zest of 1 lemon 6 scallions, thinly sliced pinch of cayenne pepper 3/4 teaspoon salt 1 tablespoon chopped fresh parsley In a saucepan over medium heat, combine the beans, water, lemon juice, and salt and cook for 5 to 7 minutes, or until the beans are just tender. Drain the beans. To prepare the sauce: In a small sauté pan over low heat, melt the butter. Add the lemon zest, scallions, and cayenne pepper. Cook for 2 minutes until the scallions start to soften.
