Guest guest Posted May 2, 2008 Report Share Posted May 2, 2008 Pineapple-Coconut Relish 2/3 cup diced ripe pineapple 1/2 cup seeded and diced yellow bell pepper 1/2 cup diced red onion 1/2 cup diced hot pepper 1/2 cup unsweetened shredded dry coconut 1 tbsp. sherry vinegar Combine all ingredients in bowl.
