Guest guest Posted April 26, 2008 Report Share Posted April 26, 2008 Zippy Maple-Mustard Dressing 1/3 cup finely diced red onion 3 tablespoons apple juice 3 tablespoons apple cider vinegar 3 tablespoons coarse grain mustard or Creole mustard 2 tablespoons maple syrup 1/4 teaspoon salt 1/2 cup safflower oil In a blender or food processor, place the red onion, apple juice, vinegar, mustard, maple syrup, and salt, and process until smooth. While the machine is running, slowly add the oil, and continue to process until smooth and creamy. Transfer to an airtight container and store in the refrigerator for up to 1 week. Makes 1 cup.
