I made this over the past weekend. delight recipe.

Curry and Orange Hummus

 

1 15 oz. can chick peas, rinsed, drained

3 cloves garlic, minced

1/4 cup orange juice

2 teaspoons soy sauce

1 teaspoon Dijon-style mustard

1/2 teaspoon curry powder

1/4 to 1/2 teaspoon ground ginger

2 teaspoons grated orange rind

salt and pepper, to taste

 

Place chick peas, garlic, orange juice, and soy sauce in a food processor and

process until a smooth consistency.

Add mustard, curry powder, and ginger and process again.

By hand, stir in the orange rind.

Add salt and pepper, if desired, to taste.

Refrigerate 1 to 2 hours. Serve. Serve with bread or pita.
