Pete Plum Tomato Salsa With Sherry Vinegar 6 plum tomatoes, peeled, seeded, cut into 1/2 " dice 1 medium shallot, sliced thin 1 serrano chile, seeded, sliced thin 2 tablespoons sherry vinegar 1/2 cup olive oil 1/2 teaspoon chopped fresh thyme or 1/4 teaspoon dried 1 tablespoon chopped fresh cilantro 1 tablespoon chopped fresh parsley salt and ground black pepper to taste Mix all ingredients together in medium bowl.
