Guest guest Posted April 14, 2008 Report Share Posted April 14, 2008 Green Beans with Chipotle Butter 1/4 cup unsalted butter, room temperature 3/4 tsp. chopped canned chipotle chile 1/2 tsp. apple cider vinegar 3/8 tsp. salt 1 1/2 lbs. green beans, trimmed Blend butter, chile, vinegar and salt in a mini processor until smooth [i don’t have a ‘mini processor’ – I’d just use a fork and a bowl!]. Cook green beans in a large pot of boiling salted water until crisp-tender, about 5 minutes; drain and pat dry. Melt chipotle butter in a large pot over medium-high heat.
