Guest guest Posted April 6, 2008 Report Share Posted April 6, 2008 Western India Poha 2 cups poha (pressed rice), washed and drained 2 medium potatoes, peeled and chopped into sticks 1/3 cup water 2 green chillies chopped 2 tablespoons vegetable oil 1 level teaspoon sambhar powder or 1/2 teaspoon turmeric 1/2 teaspoon coriander powder 1/2 teaspoon mustard seeds 1 teaspoon salt 1 tablespoon lime juice 1. Heat oil on low and put in the mustard seeds. As soon as the mustard seeds begin to pop, add the potatoes. 2. Stir fry for 3 minutes on medium heat. Add turmeric and salt. 3. Stir a couple of time and add the pressed rice and coriander powder. Add the water and cook covered for 4 minutes on low heat. 4. Check to see if the potatoes have been cooked through. If they have, remove cover and cook until the water evaporates. 5. Pour lime juice over the poha and serve. Serves 4-6 as a side dish. You rock.
