I use to love the chicken tortilla soup at IHOP but since I've stopped eating meat I sure miss it. It was really good. It had several times of beans plus all the veggies. I'm sure it was made with chicken stock so by using veggie broth I'm sure the flavor will vary some. If any one has a recipe they'd like to share I'd appreciate it.
