Guest guest Posted April 1, 2008 Report Share Posted April 1, 2008 Black Bean Spread 1 1/2 cups cooked black beans (pinto beans work too) 3 tablespoons hot salsa 2 green onions, chopped 2 cloves garlic, minced 1/2 cup low-fat cottage cheese 1 teaspoon hot pepper sauce 2 teaspoons ground cumin 1 teaspoon ground coriander seed salt and pepper to taste Combine black beans, salsa, green onions, garlic, cottage cheese, hot pepper sauce, cumin, coriander, salt and pepper in an electric blender and blend until smooth. Add a little water, if necessary, to blend mixture thoroughly. Wonderful for dipping vegetables in or spreading on sandwiches. ______________________________\ ____ You rock. Guest guest Posted April 3, 2008 Report Share Posted April 3, 2008 Hi, I'm having some company tomorrow and I decided to try your recipe. I just put up a batch. It's great! The only change I made in the recipe was to add the juice of one lime--I'm always looking for an excuse to use lime juice. Next time, just to be ornery, I'll add some pomegranate syrup.
