Guest guest Posted March 14, 2008 Report Share Posted March 14, 2008 Fresh Herb Pasta with Spicy Dressing 1 lb. penne pasta, or other tubed pasta 2 carrots, cut into thin sticks 1/3 cup plus 3 tbsps. fresh basil, chopped 1/3 cup plus 3 tbsps. fresh mint, chopped 1/3 cup plus 3 tbsps. fresh coriander, chopped 1/3 cup plus 3 tbsps. bean sprouts 2 tbsps. plus 2 tsps. oil 1/4 cup olive oil 1 tsp. sesame oil 1/4 cup lime juice 2 tbsps. plus 2 tsps. light soy sauce 1/2 tsp. sugar 2 tsps. sambal oelek, or hot chili sauce 2 tsps. oil 2 cloves garlic, sliced 2 tbsps. plus 2 tsps. unsalted cashews, chopped Cook pasta in a large pan of boiling water 10 minutes, or until al dente. Drain. Combine pasta, carrots and next 4 ingredients in a bowl. Combine next 7 ingredients in a jar with a tight-fitting lid and shake well. Add dressing to salad in bowl and toss well. Heat oil in a heavy nonstick pan over medium-high heat. Add garlic and cook until lightly browned and crisp. Serve salad sprinkled with garlic and nuts. Makes 6 servings.
