Jalapeno Bar-B-Q Sauce

3/4 cup finely-chopped onion

3/4 cup finely-chopped green bell pepper

5 jalapenos, stemmed, seeded, minced

2 tablespoons minced garlic

1/4 cup olive oil

16 ounces beer

1 quart water

1 cup prepared mustard

1/2 cup brown sugar

1/2 cup Worcestershire sauce

1/2 cup hot sauce

3/4 cup cider vinegar

3 teaspoons coarsely-ground black pepper

1 teaspoon ground New Mexican chile

salt to taste

In a large saucepan, saute the onion, bell pepper, jalapenos and garlic in oil

until soft. Add the beer and the water; bring to a boil and reduce the heat.

Stir in the remaining ingredients and simmer for an hour, stirring occasionally,

until thickened.

For a smooth sauce, place the mixture in a blender or food processor and puree

until smooth.

Makes 2 quarts.
