Guest guest Posted February 24, 2008 Report Share Posted February 24, 2008 Fruity Curried Lentils 2 cups uncooked lentils 2 quartts water 2 apples cored peeled and chopped 1/4 cup golden raisins 1/4 cup nonfat lemon yogurt 1 tsp. curry powder 1/2 tsp. salt Combine lentils and water in a large saucepan. Bring to a boil over high heat. Reduce heat and simmer 20 minutes, stirring occasionally. Stir apples and raisins into saucepan; cook 10 minutes or until lentils are tender. Drain well.
