Guest guest Posted February 22, 2008 Report Share Posted February 22, 2008 Black Beans Curry with Garbanzo Beans 2 tsps. oil 1 1/2 cups chopped onion 1 garlic clove, minced 1/2 tsp. ginger 2 tsps. curry powder 1 15 1/2 oz. can no added salt tomatoes 1/2 tsp. salt 1/4 tsp. rosemary 1/2 tsp. thyme 1 15 oz. can black beans, rinsed and drained 1 15 oz. can garbanzo beans, rinsed and drained 1/3 cup chopped fresh parsley 1 tbsp. lemon juice Heat oil in skillet over medium heat. Add onions and garlic and sauté until tender. Add ginger, curry powder, and tomatoes stirring until mixture is slightly thicken. Add salt, rosemary, thyme, and beans.
