Guest guest Posted February 19, 2008 Report Share Posted February 19, 2008 Banana Chutney 6 bananas 1 cup minced onion 1 cup raisins 1 cup minced tart apples 1 cup apple cider vinegar 2 cups sugar 1 tablespoon salt 1 teaspoon ground ginger 1 teaspoon nutmeg 1/4 cup cayenne pepper 1/3 cup lemon juice 3 cloves garlic, minced Peel and mash bananas. In a large casserole dish combine all of the ingredients. Bake in a 350~ oven for about 2 hours, stirring occasionally. When thickened, ladle into sterilized jars and seal. Makes about 2 pints.
