Guest guest Posted February 17, 2008 Report Share Posted February 17, 2008 Guiso D Repollo (Bolivia) 1 small cabbage, shredded 3 tablespoons olive oil 1 large onion, chopped 3 medium tomatoes, chopped 1 large jalapeno, chopped salt and pepper to taste 1 tablespoon tomato puree 2 tablespoons cilantro, chopped 4 medium potatoes, peeled, cooked Drop cabbage into large suacepan of boiling salted water. Simmer 5 minutes. Drain thoroughly, set aside. In skillet, saute onion in oil until soft. Add tomatoes and pepper. Saute 5 minutes. Add seasonings, puree allow to simmer 1 minute. Fold into cabbage, add to potatoes, which are cut into chunks. Cook until just heated through. Variation: Add 1/2 cup dry white wine when folding into cabbage.
