Mushrooms with Chipotle Chilies

 

4 cups button mushrooms

4 tbsps. olive oil

1 onion, finely chopped

2 cloves garlic, chopped

1 or 2 small cans chipotle chilies, drained, rinsed

and sliced

salt to taste

fresh cilantro for garnish

 

Let mushroom dry. Heat oil in skillet. Add mushrooms,

onion garlic and chipotles. Stir in coat with oil.

Cook over medium heat for 6 to 8 minutes, occasionally

stirring, until tender. Garnish with chopped fresh cilantro.
