Guest guest Posted February 2, 2008 Report Share Posted February 2, 2008 Zucchini with Coriander and Cumin 4 small baby zucchini; washed, ends trimmed, cut into match-stick shapes 2 tbsps. butter 1 tbsp. olive oil 1/2 tsp. ground cumin 1/2 tsp. ground coriander sea salt fresh ground black pepper, to taste 1 tbsp. chopped fresh cilantro Heat the butter and oil together in a sauté pan, over high heat and add the zucchini. Sprinkle the cumin and coriander over the vegetables and toss lightly as they cook. Season with the sea salt and black pepper and serve at once, garnishing with the chopped cilantro. Serves 4.
