Guest guest Posted January 24, 2008 Report Share Posted January 24, 2008 Pineapple Pepper Dip 1 cup chopped assorted bell peppers (green, red and/or yellow) 1 cup sour cream 1 8 ounce package cream cheese, softened 1 8 ounce can crushed pineapple, well drained 1/8 teaspoon salt 2 tablespoons coarsely chopped fresh cilantro or parsley 2 tablespoons chopped green onion 2 teaspoons finely chopped seeded jalapeño pepper 1 teaspoon grated fresh lime peel 1 teaspoon fresh lime juice fresh vegetable sticks, pepper, celery, carrot, cucumber, etc. tortilla chips Combine all ingredients in small mixer bowl except vegetable sticks and tortilla chips. Beat at medium speed, scraping bowl often, until well mixed, 1 to 2 minutes. Cover; refrigerate at least 1 hour. Serve with fresh vegetable sticks or tortilla chips. Makes 3 1/4 cups.
