Guest guest Posted January 18, 2008 Report Share Posted January 18, 2008 Cumin-Scented Vegetable Pilaf 1 cup brown basmati rice 2 tablespoons vegetable oil 1 teaspoon cumin seed 1 small red onion, peeled and thinly sliced 1 cup cut frozen vegetables, your choice 1 teaspoon lemon juice 2 cups water salt to taste Rinse the rice at least three or four times with water, then soak in fresh water for 30 minutes. Drain well and set aside. In a deep pan, heat the vegetable oil. Add the cumin seeds; when they begin to sizzle, add the onion. Sauté for 3 to 5 minutes or until the onions are soft. Add the vegetables and sauté for about 5 minutes. Add the salt, lemon juice, and rice. Mix well. Add the water and bring to a rolling boil. Reduce the heat. Cover and cook for 12 to 15 minutes or until all of the water has been absorbed. You will see small craters forming on top of the rice. Remove from heat. Let sit, covered, for about 5 minutes.
