Spicy Citrus Toss

 

Salad

1 cup fresh red grapefruit sections, drained

1 cup fresh orange sections, drained

10 cups loosely packed assorted lettuces

1/4 cup julienne cut red bell pepper

1/4 cup julienne cut yellow bell pepper

1/4 cup thinly sliced mild onion separated into rings

 

 

Dressing

3 tbsps. water

3 tbsps. fresh squeezed orange juice

1 tbsp. white wine vinegar

2 tbsps. salad oil

1/3 tsp. ginger

1/8 tsp. white pepper

1/8 tsp. ground cumin

1 small clove garlic, crushed

 

Combine ingredients for dressing in a jar.

Cover tightly, and shake vigorously.

Chill 3 hours. Combine torn lettuces with remaining

ingredients in a large bowl.

Pour vinaigrette over salad; toss gently and serve

immediately.

Serves 10.
