Guest guest Posted December 7, 2007 Report Share Posted December 7, 2007 Jamaican Fruit Salsa 1 cup finely chopped, peeled, cored pineapple 1/2 cup finely chopped, peeled cantaloupe 1/2 cup finely chopped, peeled honeydew melon 1/2 medium red or green bell pepper, finely chopped 1 small onion, finely chopped 1 small banana, peeled and chopped 1/4 cup chopped, seeded tomato 1 clove garlic, minced 1/4 Scotch Bonnet pepper, seeded and finely chopped 1 tablespoon finely chopped fresh parsley 2 tablespoons freshly squeezed lime juice 2 tablespoons freshly squeezed lemon juice 1 tablespoon canola oil In a medium mixing bowl, combine the pineapple, melons, bell pepper, onion, banana, tomato, garlic, Scotch Bonnet pepper, and parsley. Add the lime and lemon juices and oil. Toss gently to combine all of the ingredients. Cover and chill for about 2 hours. Yields 2 1/2 cups. Looking for a X-Mas gift?
