Guest guest Posted November 21, 2007 Report Share Posted November 21, 2007 Mexican-Style Lime Layered Pie Shaped Dip 1 19-ounce can black or kidney beans, drained 1 cup salsa, divided 1/2 teaspoon cumin 2 ripe avocados 1/2 cup salad dressing 1 large clove garlic, chopped 1 tablespoon lime juice 1 cup grated Cheddar cheese 2 green onions, chopped 1/4 cup chopped ripe olives Puree beans, 1/3 cup salsa and cumin into a food processor until smooth. Spread puree onto the bottom of a 10-inch quiche pan or pie plate. Puree together avocados, salad dressing, chopped garlic and lime juice, until smooth. Spread over bean layer; top with remaining salsa. Sprinkle grated cheese into a circle, over center of salsa. Sprinkle chopped green onions and ripe olives over center of cheese.
