Guest guest Posted November 17, 2007 Report Share Posted November 17, 2007 Spicy Stuffed Tomatoes 4 large tomatoes 2 tbsps olive oil 1 small onion, minced 2 cloves garlic 1/2 cup chopped green chili peppers 1 tsp. sea salt 1 tsp. black pepper 1/2 tsp. cayenne pepper 1 tbsp. freshly grated ginger 1/2 tsp. ground cumin 1/2 cup cubed silken tofu 2 to 3 tbsps. pine nuts 1 cup cooked mashed potatoes or cauliflower Wash tomatoes well and slice off tops. Set tops aside. Carefully scoop out pulp and set aside. Heat olive oil in medium saucepan and saut? minced onion, garlic, chopped chili peppers, salt, black pepper, cayenne, ginger, cumin, and tofu. Add tomato pulp and cook for about 5 minutes. Stir in nuts and mashed potatoes or cauliflower. Stuff tomatoes with filling and attach tops with toothpicks.
