Guest guest Posted October 21, 2007 Report Share Posted October 21, 2007 Caraotas Negras (Venezuela) 1 cup dried black beans 1 large onion, chopped 5 tablespoons olive oil 5 cloves garlic, finely chopped 1 medium hontaka chiles, crushed 2 teaspoons cumin salt to taste Cook the beans in lightly salted water about 1 hour. Drain and set aside. Saute onion in 2 tablespoons of the oil until soft. Add garlic, chiles and cumin. Cook two minutes. Add beans and the remaining oil. Salt to taste and mix well.
