Guest guest Posted October 20, 2007 Report Share Posted October 20, 2007 This is how chayote looks http://www.all-creatures.org/recipes/images/i-chayote.jpg Gypsy Chayotes With Vinaigrette 2 medium chayote squash 2 tbsps. garlic vinegar 1 tbsp. dijon mustard 1/4 cup olive oil 1/4 tsp. scotch bonnet or jalapeno type chile, minced 1/2 tsp. fresh chives minced 1 bibb or boston lettuce head separated into leaves red bell pepper for garnish Peel the chayotes and grate them into a bowl. Prepare vinaigrette from the remaining ingredients except the lettuce and pepper, and pour it over the grated chayotes. Mix well and allow to sit for 15 minutes.
