Guest guest Posted October 13, 2007 Report Share Posted October 13, 2007 Avocado and Tomato Sandwiches with Jalapeno Mayonnaise Jalapeno Mayonnaise 1/2 cup soy mayonnaise 3 tablespoons pickled jalapenos, drained and finely minced 1 tablespoon lemon zest, grated 1/4 teaspoon salt 1/8 teaspoon coarsely ground black pepper Sandwich 8 slices whole-grain bread, toasted 1 avocado, ripe, peeled and sliced 1 tomato, sliced 1 cup alfalfa sprouts Prepare the jalapeño mayonnaise by combining the ingredients in a small bowl. Mix until blended, then spread on 4 pieces of the toasted bread. Arrange the avocado and tomato slices on top, and top with alfalfa sprouts and the remaining bread. Cut each sandwich in half and serve. The alfalfa sprouts give the sandwich a nice crunch. Substitute watercress or arugula for variety.
