Guest guest Posted October 8, 2007 Report Share Posted October 8, 2007 Ingredients: • 1 large ripe tomato, cut into 1/8-inch dice • 1 or 2 fresh serrano chiles, stemmed and finely chopped, to taste • 1 clove garlic, minced • 3 tablespoons chopped cilantro, plus a little for garnish • 1 cup finely diced white onion, plus a little for garnish • 3 large ripe avocados • 2 to 3 teaspoons fresh lime juice • salt to taste • 1 small jicama, peeled, sliced, and cut into wedges • 1 cucumber, peeled and sliced into rounds or ovals • 1 red, yellow, or green bell pepper, cut into 1-inch-wide diamonds In a small bowl, combine tomato, chiles, garlic, and cilantro. Scoop the onion into a strainer, and rinse under cold water; shake to remove excess water, then add to the mixture.Cut avocados in half, and scoop out flesh into a medium-size bowl. Mash with a large fork, leaving plenty of lumps. Stir in tomato mixture, lime juice, and salt. Garnish with cilantro and onion. Serve with jicama wedges, cucumber rounds, and bell pepper diamonds.
