Tomato With Cream Curry

 

1 pound tomatoes

2 medium onions

1 long green chile

1/4 cup oil

1 1/2 cups soy milk

1 teaspoon garlic paste

1/4 teaspoon turmeric

salt to taste

coriander to garnish

 

In a skillet heat oil and add chopped onions. Fry until light brown. Then add

garlic, salt, turmeric, chopped green chilies and fry for a minute or two. Add

sliced tomatoes over medium heat, cook for ten minutes or until all the liquid

is absorbed. Add soy milk and simmer until sauce thickens, about four minutes.

Goes well with sour dough bread and rice. Serves 4.
