Guest guest Posted September 30, 2007 Report Share Posted September 30, 2007 Corn Tomatillio Salsa 1 cup corn, roasted kernels 2 tomatillos, medium, husked and coarsely chopped 1 tablespoon red onion, finely diced 1 1/2 teaspoons jalapenos, minced 2 tablespoons fresh lime juice 2 tablespoons coarsely chopped cilantro 1/2 teaspoon honey or maple syrup Combine the corn, tomatillos, onion, jalapeno, lime juice, cilantro and honey in a bowl and season to taste with salt and freshly ground pepper.
