Guest guest Posted September 30, 2007 Report Share Posted September 30, 2007 Szechuan Marinated Mushrooms 1 pound medium sized fresh white mushrooms 1/4 cup cider vinegar 3 tablespoons brown sugar 1 tablespoon szechuan sauce or any Asian hot sauce 1 1/2 teaspoon minced chopped garlic 1/2 teaspoon salt Trim and quarter mushrooms; place in a large bowl. In a medium sized microwaveable dish, combine vinegar, sugar, Szechuan sauce, garlic and salt. Microwave on high until mixture bubbles, about 1 minute. Add mushrooms; stir to coat. Cover and refrigerate to blend flavors, about 1 hour. Drain and garnish with finely diced red peppers or chopped parsley, if desired.
