Guest guest Posted September 25, 2007 Report Share Posted September 25, 2007 Potted Chipotle Cheddar 2 cups shredded old Cheddar cheese 1/3 cup butter, softened 2 tbsps. tequila or whipping cream (good with either) 2 tbsps. minced chipotle pepper 1 tbsp. minced fresh coriander In bowl, beat together cheese, butter and tequila until fairly smooth; stir in chipotle pepper. Pack into terrine or jar. Cover and refrigerate for up to 4 days. Sprinkle with coriander.
