Books that I have with both good information and recipes are " Why you don't need meat " and " Encyclopedia of vegetarian living " , both by Peter Cox. Both of my copies are ten years old, but I still use them regularly. For recipes, if you like Thai food I recommend " Thai Vegetarian Cooking " by Vatcharin Bhumichitr. Unlike most Thai recipe books, this doesn't contain the usual meat based recipes with the meat taken out, but authentic Thai vegetarian recipes, and with pictures and descriptions to inspire you.
