Coming from a very omnivorous family, becoming vegetarian is a challenge, especially since I spend much of my time with my eighty-six year old grandmother, who is completely against the idea. Fortunately, both she and my uncle who lives with her are quite willing to try new things, particularly if they don't have any ingredients that are " too far out there " , so to speak. We've recently discovered that none of us can stand the texture of couscous. Does anyone have suggestions for something else to use in recipes that call for it? I'm also looking for a good source of vegetarian recipes that don't make very much, as I don't want to cook a huge batch of something, only to discover I think it isn't very good, or if it's even just plain disgusting. Does anyone have a good suggestion for a replacement for ground beef? I have a recipe for barley soup that calls for ground beef, and am not sure what I could use to replace the beef.
