Guest guest Posted August 30, 2007 Report Share Posted August 30, 2007 Cheese and Chile Snack Bar 1/3 cup plain dry bread crumbs 12 ounces Monterey Jack cheese, chopped or shredded 8 ounces cheddar cheese, chopped or shredded 2 eggs 2 tablespoons sour cream 1 1/2 tablespoons all-purpose flour 1 4 oz. can chopped mild green chiles 1/3 cup finely chopped red bell pepper or 1 (2 oz.) jar diced pimientos, optional Preheat oven to 350 degrees. Sprinkle bread crumbs on bottom of ungreased 9-inch square baking dish. Combine cheeses; turn into dish. Beat together eggs, sour cream and flour; pour over cheeses. Sprinkle with green chiles and red bell pepper. Bake 40 to 50 minutes or until lightly browned. Let stand 5 to 10 minutes. Cut into bars. Makes 32 appetizer servings. Variation: Double chile: Sprinkle top with 2 to 3 tablespoons chopped jalapeno chiles or beat 1/2 teaspoon each chile powder and ground cumin into egg mixture.
