Guest guest Posted July 28, 2007 Report Share Posted July 28, 2007 Curry Fried Cabbage: 1 onion, finely chopped, may use green onion, brown onion or baby leeks 1 potato, diced 6 tbsps. olive or coconut oil 1/2 tsp. curry powder 1/2 tsp. sea salt 1 medium-size cabbage, thinly sliced or shredded 4 to 5 small carrots, sliced into rounds Sauté onion in oil until lightly brown, less cooking time for green onion or baby leeks. Add diced potatoes, carrots, salt and curry powder; stir over medium heat 4 to 5 minutes. Mix in cabbage (May include any cooking greens). Pour in 1/2 cup water. Cover, reduce heat, and simmer until liquid is absorbed and cabbage is still slightly crunchy.
