Guest guest Posted July 3, 2007 Report Share Posted July 3, 2007 Hi Everyone, My husband and I are working at making the transition to a vegetarian lifestyle. I'm not much of a cook and never have been so I don't have any recipes accumulated that I can share yet. We are both in our fifties and are getting kind of a late start to working at improving our health. For myself, the journey started about a year ago when I was diagnosed with Type 2 diabetes. I spent most of the last year being in denial about it and not caring for myself at all. But a couple months ago, I really started to take an interest in getting back to health and possibly even reversing the diabetes completely. I started power walking 3 times a week and am increasing that by 15 minute increments over the weeks until I reach 1/2 aerobic activity 6 days a week. So far, I've lost 20 lbs (I started out at 193). I'm also in weight watchers which is helping me a lot. I guess my main concern is will I be getting enough protein? I have to go really lite on even whole grain pastas and rice because they jack my blood sugar up really high. I've also noticed a lot of recipes call for black beans. Are those higher in protein that other beans? Also, do you have to combine a grain with beans to get a complete protein? I'm sure I'll have other questions as I go along. I'm also wondering if there are other diabetics on this list making a vegetarian lifestyle work for them. Thanks for your time. I look forward to learning a lot.
