Squash and Sweet Potato Soup with Chipotle Sauce

 

1 2 yo 3 lb. large winter squash, halved, seeds discarded

1 tbsp. olive oil

2 lbs. sweet potatoes

1 large yellow onion, chopped

white part of 1 leek, chopped or use more yellow onion

2 tsps. chopped, peeled fresh ginger

8 to 10 cups veggie stock or broth

white pepper to taste

2 to 3 tbsps. fresh lemon juice or to taste

1 tbsp. honey or maple syrup, optional

 

Chipotle Sauce;

1/2 small can chipotle chiles in adobo sauce

1 tbsp. ground cumin seeds, toasted

2 tbsps. fresh lime juice or to taste

2 cloves garlic, minced

water as needed

salt to taste

 

Chipotle Sauce; Combine chiles in adobo sauce in small saucepan with garlic

and cumin seeds. Heat over med. heat until garlic is fragrant and heated

through. Cool slightly and pureé sauce until smooth, adding water as needed to

achieve desired consistency. Add lime juice and salt to taste.

Soup; Preheat oven to 400 degrees. Brush cut sides of squash with oil and

arrange, cut side down, in a shallow baking pan. Prick sweet potatoes all over

with a fork and roast with squash until very tender, about 50 minutes for

squash and about 1 1/4 hours for sweet potatoes. Cool and scoop flesh from

squash into a bowl. Peel sweet potatoes and add to squash. Cook onion in

remaining 2 1/2 tsps. oil with salt to taste in a 6-qt heavy pot over moderately

high heat, stirring occasionally, until golden brown, about 10 minuters. Stir in

squash and sweet pot., leek, ginger and 8 cups stock and simmer, uncovered,

stirring occasionally, 30 minutes. Pureé in batches in a blender (use caution),

transferring to a clean pot. Bring to a simmer and, if too thick, add more

stock. Season with salt and white pepper. Finish by stirring in lemon juice to

taste, and honey if desired. Serve soup drizzled with some chipotle sauce or

swirl sauce in to make a pattern. May be made 2 days

ahead, cooled completely and chilled. Reheat before adding chipotle sauce and

serving.
