Newbie greetings, and Chanterelle stir fry

Mung bean and chanterelle mushroom stir fry

 

1 cup mung beansprouts /large handful (home sprouted are best.)

14 chanterelles cut in half

1 large carrot cut into strips

1/4 cup fresh peas from the garden (frozen will do.)

1/2 green sweet pepper sliced finely

2 tablespoons /15 ml cashew nuts

1 tablespoon /15 ml sunflower oil

2 tablespoons /15 ml soy sauce or oyster mushroom sauce

1 tablespoon /15 ml cider vinegar

1 tablespoon /15 ml sweet chilli sauce

1 teaspoon dry chilli seeds

 

Toss all ingredients together in a bowl.

Heat wok.

Add everything and stir fry for 4 - 5 minutes, remembering to toss

every minute.

Serve with rice or noodles.

Serves 2
