Guest guest Posted June 21, 2007 Report Share Posted June 21, 2007 Carrot Slaw With Cashews 3 cups carrots, shredded 1 quart boiling water 1/2 serrano chili, seeded and minced 2 tablespoons lime juice 1/2 tablespoon maple syrup 2 tablespoons cashew pieces, toasted 1 tablespoon cilantro, chopped Place carrots in a colander. Pour boiling water over them, drain well. Combine chili, lime juice and maple syrup in a bowl and whisk with a fork. Add carrots, cashews and cilantro and toss to mix.
