Guest guest Posted June 14, 2007 Report Share Posted June 14, 2007 Peanut Patties with Spicy Barbecue Sauce 1 1/3 cups unsalted roasted peanuts 1 1/2 cups cooked brown rice 1 medium onion, chopped 2 eggs 2 tbsps. plus 2 tsps. smooth peanut butter 2 tbsps. plus 2 tsps. fruit chutney 1 1/2 tsps. curry powder 2 tsps. cornflour 1/3 cup plus 3 tbsps. water 1/3 cup plus 3 tbsps. tomato sauce 2 tsps. worcestershire sauce 1/2 tsp. hot red pepper sauce 1 tbsp. plus 1 tsp. brown sugar 2 tbsps. plus 2 tsps. oil Blend or process peanuts and rice until finely chopped. Add next 5 ingredients and process until mixed thoroughly. Refrigerate mixture for at least 30 minutes. Meanwhile, combine cornflour and water in a jar with a tight fitting lid. Shake well. Combine with remaining ingredients, except oil, in a saucepan. Stir over high heat about 5 minutes or until mixture comes to a boil and thickens. Stand off heat. Using lightly floured hands, shape mixture into 2 patties per serving. Heat oil in a large frying pan over medium high heat. Cook patties 2 to 3 minutes per side or until browned. Drain on absorbent paper. Serve with sauce. Serves 6. Be smarter than spam.
