Sweet and Spicy Grilled Fruit Skewers

 

1/2 cup brown sugar

1/4 cup rum

2 tsp. vanilla extract

1/2 tsp. cinnamon

1/2 tsp. ground ginger

1/4 tsp. ground chipotle chili pepper

1 large pineapple, peeled, cored, cut into 2x1-inch pieces

2 ripe yellow bananas, peeled, cut into 2x1-inch pieces

 

Stir first 6 ingredients in a small bowl until sugar dissolves. Set aside.

Thread fruit alternately onto 6 double skewers. (We suggest threading fruit

onto two parallel skewers to prevent pieces of fruit from spinning around as

you turn kabobs!) Brush with spice mixture and let stand 5 minutes.

Grill or broil fruit skewers 10 minutes or until golden brown, basting with

spice mixture and turning occasionally. Serve with low-fat vanilla ice cream

for a more decadent treat.

Serves 6.

Hi Terry, I'm new to the group. In fact, I've never been in one before. Anyway,

this sounds yummy and I'll try it soon.
