Guest guest Posted June 8, 2007 Report Share Posted June 8, 2007 Collards In Peanut Dressing 1/2 cup plain yogurt 1/4 cup chunky peanut butter 1/4 cup orange juice 1 teaspoon grated fresh ginger 1 dash ground cumin 1 dash sweet paprika 1 bunch collard greens Whisk the yogurt until it is smooth and the consistency of heavy cream. Whisk in the peanut butter, orange juice, ginger, cumin, and paprika. Steam the collards until bright green, about 3 minutes. Remove from the heat and chop coarsely. Spoon the dressing lightly over the steamed collards. Yields 6 servings. Be smarter than spam.
