Guest guest Posted May 23, 2007 Report Share Posted May 23, 2007 Curried Carrot Soup (India) 2 medium carrots chopped 1 small onion chopped 1 small potato chopped 1 clove garlic crushed 2 tablespoons orange juice 1 tablespoon tomato puree 1 tablespoon fresh parsley chopped 1 cup skim milk 2 cups water salt to taste 1 teaspoon curry powder 1/2 teaspoon butter Cook vegetables in the water. Simmer covered till tender. Add orange juice, curry powder, tomato puree,skim milk and salt to taste. Cool to room temperature. Blend till smooth. Add parsley and heat without bringing to boil.
