Spicy Eggplant Wheels

 

2 eggplants, cut into 1/4 inch slices

1 tsp. salt, optional

2 tsps. vinegar

3 cups crushed tomatoes

3 cloves garlic, minced

1/2 onions, chopped

1 tbsp. olive oil

1/2 lb. manchego cheese, grated

 

Preheat oven to temperature 350 degrees. Place eggplant in a large bowl.

Sprinkle with salt. Add vinegar and cover with water. Let

stand 10 minutes. Remove and pat dry. While eggplant is soaking,

combine tomatoes, garlic and onion in a non-reactive saucepan and

simmer 5 minutes. Arrange eggplant in oiled baking dish. Cover with

tomatoes. Bake 20 minutes. Sprinkle with cheese and

bake another 10 to 15 minutes or until cheese is melted.
