Guest guest Posted May 7, 2007 Report Share Posted May 7, 2007 Cubed Potatoes with Fresh Spinach 1-1/2 lbs. boiling potatoes 4 T. butter or peanut oil 1 t. cumin seeds 1 t. brown mustard seeds 2 c. chopped spinach 1/4 t. cayenne pepper 1/2 t. turmeric 1 t. Fenugreek 1 t. salt (optional) 1 t. garam masala fresh lemon wedges for garnish Preparation Boil potatoes with skins until tender. Drain potatoes, cool. Peel, cube in 1/2 " pieces. Heat butter or oil in heavy, non-stick frying pan, sauté potatoes until brown, remove from pan. Add the cumin and mustard seeds to the hot pan; fry until mustard seeds begin to pop. Reduce heat and add spinach, cayenne, turmeric and Fenugreek. Add a few T. water, cover, steam for 15 min. Remove lid and add potatoes, salt and garam masala. Stir and cook until potatoes are hot.
