Red lentils cook faster, so use the brown but cook them longer (and

watch the liquid levels).

 

And the red pepper is definitely a necessity! (Of course, I think

that about every recipe - teehee!).

 

I love the idea of adding fresh coconut!!! We don't get much in the

midwest here and my nearest Whole Foods is 30 miles away. Sometimes I

see it the Mexican bodegas... yep. I need to make a trip!!!! Thanks
