Last year I asked in the Vegetarian_Group if anyone had a carrot

salad with peanuts/peanut butter; a vegetarian restaurant I'd been

to served one. Someone shared this recipe.

 

I finally made it for us recently and it is delicious, definitely a

keeper. I don't care for cumin and I didn't have any but I did use a

very small sprinkling of taco seasoning since it had cumin in it. I

also blended some peanut butter into the dressing, not much.

 

This isn't like the restaurants but better. We really enjoyed it.

Carrot, Peanut and Raisin Salad with Cumin Dressing

 

Salad:

2 to 3 large carrots, cut into julienne

2 tablespoons sesame seeds, toasted

1/2 cup dry roasted peanuts, roughly chopped

1/2 cup golden raisins, chopped

2 tablespoons finely chopped fresh coriander

(cilantro)

 

Dressing:

1 tablespoon olive oil

juice of 1 lemon

1 clove garlic, crushed

1/4 teaspoon sugar

1/2 teaspoon ground cumin

salt and freshly ground black pepper

 

Combine all of the salad ingredients in a large

bowl.

Combine all of the dressing ingredients in a small

bowl. Whisk

thoroughly until combined. Pour the dressing over

the salad and toss

thoroughly.

Serve at room temperature. This salad makes a good

accompaniment to

a curry.

Makes 4 servings.
