Guest guest Posted May 6, 2007 Report Share Posted May 6, 2007 Last year I asked in the Vegetarian_Group if anyone had a carrot salad with peanuts/peanut butter; a vegetarian restaurant I'd been to served one. Someone shared this recipe. I finally made it for us recently and it is delicious, definitely a keeper. I don't care for cumin and I didn't have any but I did use a very small sprinkling of taco seasoning since it had cumin in it. I also blended some peanut butter into the dressing, not much. This isn't like the restaurants but better. We really enjoyed it. Donna said you are the one who original posted this recipe, so thank you, Jack. Carrot, Peanut and Raisin Salad with Cumin Dressing Salad: 2 to 3 large carrots, cut into julienne 2 tablespoons sesame seeds, toasted 1/2 cup dry roasted peanuts, roughly chopped 1/2 cup golden raisins, chopped 2 tablespoons finely chopped fresh coriander (cilantro) Dressing: 1 tablespoon olive oil juice of 1 lemon 1 clove garlic, crushed 1/4 teaspoon sugar 1/2 teaspoon ground cumin salt and freshly ground black pepper Combine all of the salad ingredients in a large bowl. Combine all of the dressing ingredients in a small bowl. Whisk thoroughly until combined. Pour the dressing over the salad and toss thoroughly. Serve at room temperature.
