Guest guest Posted April 21, 2007 Report Share Posted April 21, 2007 Potato Parmesan Soup with a hnt of spice 8 peeled and chopped potatoes 3 green onions chopped (save green for garnish) 1 minced garlic clove 1 1/2 tbsps. course ground pepper Pinch red pepper flakes 1 tbsp. salt 1 quart heavy cream 1 cup grated parmesan cheese Boil and puree potatoes. Add chopped white part of green onion, garlic, heavy cream, salt, and pepper. Add red pepper flakes. Cook on low heat for 30 minutes. Add parmesan cheese at the end of cook time.
